From Aricha in Ethiopia’s Yirgacheffe hills. It’s called “Bildimoo,” inspired by the warmth of red clay. Dry on beds for 15-21 days, turned by hand, protected from strong sun and rain, preserving their pure flavor. It tastes gently of herbs and fruits.
